Vanilla can sound simple, but a good vanilla shouldn’t taste plain.

Ingredients
- 1 cup whole milk
- 1 cup heavy whipping cream
- ½ cup half-and-half
- ½ cup granulated sugar
- 1 tablespoon instant French vanilla pudding mix, dry
- 2 teaspoons vanilla bean paste
- 1 teaspoon pure vanilla extract
- ¼ teaspoon butter extract, optional
- ⅛ teaspoon fine sea salt

How to Make Classic Vanilla Bean Ice Cream in the Ninja CREAMi Deluxe
1. Start with the milk
Add the whole milk, sugar, French vanilla pudding mix, vanilla bean paste, vanilla extract, optional butter extract, and salt to a large measuring cup or mixing container.
2. Blend until smooth
Use an immersion blender to combine everything until the pudding mix is fully incorporated, the vanilla bean paste is evenly distributed, and the sugar is mostly dissolved.
You can also use a whisk if you prefer. I actually started making the recipes with a whisk and that works fine, it’s just not as fast as the immersion blender.
There’s no need to beat a lot of air into the mixture. You’re simply looking for a smooth, well-combined ice cream base.
3. Add the richer dairy
Pour in the half-and-half and heavy whipping cream.
Blend briefly, just until everything is evenly combined. There’s no need to continue blending once the mixture is smooth.
4. Pour into the Deluxe pint
Pour the mixture into your Ninja CREAMi Deluxe pint container, staying within the appropriate MAX FILL line.
Place the lid on the pint and freeze it on a flat, level surface for 24 hours, or until completely solid. It’s important to let the pint freeze for the entire 24 hours.

5. Process the frozen pint
Remove the frozen pint from the freezer and prepare it according to the instructions for your Ninja CREAMi Deluxe. Note that the top of the contents need to be flat to prevent damage to the Ninja Creami Deluxe blade. Oftentimes a hump rises in the middle of the pint, and it needs to be scraped down until it’s flat on top.
Select:
FULL → ICE CREAM
Let the machine complete the cycle.
6. Check the texture
Take a look at the ice cream after the first spin.
If it’s creamy, you’re finished.
If it looks dry or crumbly do a RE-SPIN.
A RE-SPIN isn’t a sign that you’ve done something wrong. Frozen bases can process differently depending on freezer temperature and other small variations.


Why This Recipe Works
Whole milk
Whole milk provides the primary liquid base while contributing enough milk fat to help create a creamy result.
Heavy whipping cream
This brings most of the richness. It helps give the finished vanilla that satisfying ice-cream texture rather than making it taste like frozen milk.
Half-and-half
Half-and-half sits nicely between the two. It adds richness while helping balance the heavier cream.
Granulated sugar
The sugar does more than make the recipe sweet. It’s also an important part of the finished frozen texture.
French vanilla pudding mix
I use French vanilla pudding mix in my actual recipe. Just one tablespoon helps support the creamy texture while adding another layer of vanilla flavor.
Vanilla Bean Paste
This is one of my favorite parts of the recipe. It gives the ice cream a deeper vanilla flavor along with those beautiful little vanilla bean specks.
Pure Vanilla Extract
Vanilla extract rounds out the vanilla bean paste and helps make vanilla the unmistakable star of the recipe.
Butter Extract
This one is optional, but ¼ teaspoon adds a subtle buttery note that makes the vanilla taste a little richer.
Sea salt

My Classic Vanilla Bean Test Kitchen Notes
I’ve made this recipe about ten times now, which is probably the best review I can give it.
I’ve made quite a few different CREAMi flavors, including some much more elaborate vanilla variations, but Classic Vanilla Bean continues to be the one I think is easiest to pair with practically anything.
The vanilla flavor is noticeable enough that I enjoy eating it completely plain. But if we’re pulling out toppings, cookies, sauces, or candy, this is the vanilla base I want underneath them.
That’s one of the reasons I think it’s particularly useful to have this recipe in your collection: it doesn’t lock you into one dessert.
One pint can stay beautifully simple. The next can become something completely different.
Toppings and Mix-Ins to Try
Once you’ve made the classic recipe, there are plenty of ways to change it.
Try crushed chocolate sandwich cookies, mini chocolate chips, chopped chocolate, toffee pieces, sprinkles, chopped cookies, caramel sauce, chocolate sauce, or your favorite candy pieces.
You can also keep things simple with fresh berries or serve a scoop alongside brownies, cobbler, pie, or another warm dessert.
For a mix-in, make a hole down the center of the processed ice cream, add your chosen ingredient, and use the MIX-IN program according to your machine’s instructions.
Hosting idea

A generously sized glass measuring cup makes it easy to combine the ingredients and then pour the base directly into the CREAMi container without making a mess.
Immersion Blender
I like an immersion blender for quickly incorporating the pudding mix and vanilla bean paste into the milk. A whisk works too, so I wouldn’t call an immersion blender essential—but it is convenient.
Ice Cream Scoop
Once the ice cream is processed, a sturdy scoop makes serving much easier, especially when I’m trying to get those pretty rounded scoops for dessert bowls.
Frequently Asked Questions
Can I use regular vanilla pudding instead of French vanilla?
Yes. I use French vanilla instant pudding mix in my version because I like the additional vanilla character it brings, but regular instant vanilla pudding mix can be substituted.
The flavor won’t be exactly identical, but the recipe will still work.
Do I have to use butter extract?
No. The butter extract is optional.
If you have it, I like the subtle richness that ¼ teaspoon adds. If you don’t, leave it out rather than buying an entire bottle just for this recipe.
Do I need vanilla bean paste?
For Classic Vanilla Bean, I think it’s worth using.
Vanilla bean paste contributes both flavor and the little vanilla bean flecks that help distinguish this recipe from ordinary vanilla ice cream.
Why did my Ninja CREAMi ice cream come out crumbly?
A crumbly first spin is fairly common with CREAMi recipes and doesn’t necessarily mean the recipe failed.
For this recipe, I recommend running a RE-SPIN if the first processing leaves the ice cream dry or crumbly. Some add a tablespoon of their preferred liquid before the RE-SPIN, but I find the extra liquid unnecessary.
Can I add mix-ins?
Absolutely—and that’s one of the things I like most about this recipe.
Process the vanilla ice cream first. Then dig a hole down the center of the container, add your mix-ins, and run the appropriate MIX-IN program.
Can I refreeze leftover Ninja CREAMi ice cream?
Yes. Smooth the remaining ice cream into a relatively level surface before returning the pint to the freezer.
The texture will firm back up when frozen, so you may need to process the leftovers again before serving.
A Vanilla Recipe Worth Keeping
After making this Classic Vanilla Bean 12 times, I still think it’s one of the most useful recipes to have in my Ninja CREAMi collection.
